Meaning & usage

Derived from the Bengali word kôsha (কষা), meaning "to reduce" or "cook down." In Bengali cuisine, kosha refers to a cooking technique in which meat or vegetables are slowly cooked with spices until the moisture evaporates and the gravy becomes thick, concentrated, and intensely flavorful. The best-known example is Kosha Mangsho, a beloved Bengali mutton dish traditionally served at family gatherings, celebrations, and festive meals.
