Meaning & usage

A dosa is a crisp crêpe made from a batter of rice and urad dal soaked, ground and fermented overnight. It is the breakfast staple of much of South India, served with coconut chutney and sambar. The masala dosa hides a spiced potato filling inside; the paper dosa is a metre of golden crisp; the rava dosa is a quick, lacy semolina version that needs no fermentation.
